Spicy Tomato Soup
1.2kg Tinned Tomato
2ooml vegetable stock
1 onion
3 garlic cloves
1 carrot, quartered and chopped
2 fresh jalapeno peppers
6 sundried tomatoes
1 tsp vegemite
1/2 tsp each of oregano, basil and thyme
1tbsp hot sauce
1 tbsp tomato sauce
1 tsp worcester sauce
1 tsp freshly milled black pepper
1. Saute sliced garlic, onion and carrot till caramelised. Add stock, sundried tomato and jalapenos and simmer until carrot is tender.
2. Add all other ingredients except for the pepper and 2 cups of water. Boil for 15 minutes.
3. Add pepper and blend till smooth.
Serve with garlic bread or cheese toasties.
